For the coffee lover who doesn’t like the jitters that come with coffee on an empty stomach, I have a morning coffee treat that gives me the steadier pick-me-up I need to last through the morning.  And for those who are avoiding dairy and processed sugars, this recipe will also come as great news to you.

I gave up on any effort to avoid dairy when we came to India because nondairy options are few, harder to find, and expensive. It just wasn’t worth the effort. I found (expensive) almond milk which I buy sparingly for my daughter and her frequent colds/allergies, but I couldn’t afford to use it on the rest of us “normal” people.
My dear American friend S.– a woman of many skills, one of which is running a family of six in India somewhat effortlessly–introduced me to Cashew Coffee! I have no testified about Cashew Coffee to everyone I know here and several Indian friends who don’t even tend to drink much coffee, but are lactose intolerant, LOVED it! Yay for a new treat. S. taught me to make it with dates, but my blender isn’t cool enough to manage blending dates smoothly, so I use honey instead.  And so does this recipe I’ve attached here! S. also sometimes adds collagen for protein and that just means I stay high energy and steady for a longer morning.  Hope you enjoy trying this yourself!

Now if only I could find me some decaf coffee in India… I’d be drinking this through the monsoon evenings too! 😉
